
French toast style crumpets with blueberry compote and crème fraîche
Put the blueberries in a saucepan with the maple syrup and 2 tablespoons of water. Simmer over a medium heat and bring to a simmer, cooking for 8-10 minutes until the blueberries are soft and have released a purply syrup.

Heat the oil in a large frying pan, then fry the crumpets for 2 minutes on each side until golden and puffy.

Meanwhile, whisk together the eggs and milk in a large bowl and dunk in the crumpets until fully saturated.
Serve with spoonfuls of the blueberry compote, a dollop of crème fraîche and a drizzle of maple syrup.
