Classic Icelandic choux pastry puffs that can be filled with sweet fillings
Preheat the oven to 200°C (convection).
Add the eggs one at a time, beating well between each addition.
Put water and butter in a pot and bring to a boil. Boil for two minutes.

Add the flour and mix well until the dough is smooth.
Bake at 200°C for 25 minutes. It is very important not to open the oven for the first 15 minutes of baking time so that the puffs don't collapse.

Allow the dough to cool for a few minutes. You may transfer the dough to a mixer bowl at this stage or continue mixing by hand.

Cool completely before filling with sweet fillings.
Put the dough in a piping bag and pipe the puffs onto a parchment-lined baking sheet, or use spoons to form the puffs.
